DESCRIPTION

Treat yourself to a saucy and spicy peri-peri grilled quarter chicken meal. A wholesome dish that keeps you craving for more, best enjoyed in the evening.

INGREDIENTS:

¼ cup paprika

2 tablespoons hot chilli powder

1 cup fresh lemon juice

3 cloves garlic; minced

1½ teaspoons chopped fresh ginger

1½ teaspoons salt

4 bone-in chicken breast halves

METHOD:

  1. Pre-heat your oven to 180°C. 
  2. Pat the chicken dry with a kitchen towel and season with salt and pepper. 
  3. In a bowl, mix garlic, butter, lemon juice and Homegrown Pele Pele Sauce. 
  4. Allow chicken to marinate in the sauce for at least 15 minutes. 
  5. Place chicken in a roasting pan and roast in the oven for 40 minutes. 
  6. Continuously brush the remaining marinade onto the chicken while turning regularly until cooked through. Alternatively, flame-grill the chicken until cooked through. 
  7. Serve with braaied sweetcorn, a fresh bread roll from the Shoprite bakery and fried chips.
