This yummy meal is loaded with root vegetables, high in vitamins and minerals and is perfect for winter days.


2 tbsp. cooking oil
1 large onion; roughly chopped
3-4 garlic cloves; minced
1 tbsp. cumin seeds
2 bay leaves
60g tomato paste
2 celery sticks; chopped
2 large carrots; chopped
250g cubed butternut
2 medium potatoes; cubed
1 cup frozen peas
4 tomatoes; roughly chopped
500ml vegetable stock
Salt and pepper, to taste


  1. In a deep hot pot heat oil and sauté onion and garlic. 
  2. Add cumin seeds, bay leaves and tomato paste. 
  3. Gently stir, add in celery sticks, carrots, butternut, potatoes, frozen peas, tomatoes.
  4. Pour in vegetable stock, season with salt and pepper. 
  5. Let it simmer for 20 – 30 minutes or until vegetables are soft.
